If green is what you're seeking in a restaurant, go no farther than the Arboretum Restaurant at the Minnesota Landscape Arboretum in Chaska, Minnesota. In May 2012, the Green Restaurant Association designated the Arboretum Restaurant as a Certified Green Restaurant®, identifying it as one of the most eco-friendly restaurants in the Twin Cities and the only such certified food court in the state of Minnesota.
Arboretum Restaurant scored 237.84 points and a three-star rating from the association. |Culinary Institute of America Announces ProChef Certification Graduates - published Tuesday, March 13, 2012|
University Dining Services is pleased to announce Catering Executive Chef Greg Collin (left in picture) and Chef Manager Stacy Wiroll (right in picture) have recently earned ProChef II certification from The Culinary Institute of America (CIA), the world's premier college.
The CIA's ProChef Certification is a comprehensive professional development and culinary skills verification program which measures core culinary managerial and financial acumen, including a chef's skill in taste proper cooking methods, authenticity, plating, use of all ingredients, hygiene, and disposal of waste.
Chefs Colline and Wiroll's completion of ProChef II is the culmination of a 10-week program that requires completion of online coursework and multiple hours in the kitchen practicing and advancing their skills, leading to a four-day pratical and written exam judged by Certified Master Chefs at CIA's Hyde Park, NY campus.
University Dining Services now has three ProChef-certified chefs. District Executive Chef, Gil Junge (center in picture), completed his certification in February 2010

Students on the St. Paul Campus will have a new dining option beginning December 19 when Papa John's opens in St. Paul Student Center's Terrace Cafe. Papa John's will be open Monday-Thursday 10:30AM - 3:00PM and Friday 10:30AM - 2:00PM. In addition to solo personal-sized pizzas, Papa John's will serve parmesan breadsticks with a variety of dippin sauces and spicy buffalo wings.
Celebrating the grand opening of this Papa John's location, University Dining Services, in conjuction with Student Unions & Activities, will be giving away five free pizza coupons to the first 15 people in line on December 19 at 10:30AM. Students, staff and faculty are invited to stop by the Terrace Cafe on the first day of opening for free samples and prizes from University Dining Services as well.

Cone 10 Cafe in West Bank's Regis Center for Arts will close indefinately on Wednesday, December 14, due to decreasing customer traffic and the existing depressed economic conditions.
University Dining Services continues to operate Starbucks in Hanson Hall, Dunn Bros Coffee in Wilson Library, Essentials & Java City in Blegen Hall as well as a food court and cafe in Carlson School of Management just minutes away from Regis Center for Arts.

|UDS Introduces Meatless Mondays - published Tuesday, November 15, 2011|
University Dining Services at the University of Minnesota is joining the Meatless Monday movement. The campaign coincides with UDS' mission to encourage positive health and wellness along with protecting and improving the environment.
Meatless Monday promotes skipping meat for one meal eavery week since such a practice can help reduce your impact on the environment. Meat products typacally produce more Green House Gases than fruits and vegetables along with requiring more resources in order to be raised properly.
UDS notes that there will still be meat options offered on Meatless Monday, but they will not be as prominent, as a menu highlighting vegan and vegetarian options will be created. UDS encourages students, faculty and staff to look ahead at what will be offered on its NetNutrition website, which shows menus up to a week ahead of time.

University of Minnesota's TCF Bank Stadium hosted rock band U2 on Saturday, July 23, as part of U2's "360* Tour." ARAMARK, TCF Bank Stadium's premium concessions food service provider, served up foods and beverages to 58,500 fans attending the event. This was the first concert held at an outdoor stadium venue in the Twin Cities since 1978 at the old Met Stadium.

University Catering at the University of Minnesota was awarded silver in the 2010 Loyal E. Horton Dining Awards, presented annually by the National Association of College and University Food Services (NACUFS). University Catering won the award in the "Catering — Standard Menu” category for the seven regional menus featured in the 2009 TCF Bank Stadium Suite Guide. The award will be presented to the University of Minnesota in July at the association's annual conference in San Jose, California.

Chef Gil Junge earned the ProChef Level II certification from the Culinary Institute of America (CIA), increasing his culinary and leadership skills.
The ProChef Level II exams took place over a four day period in February at the CIA campus in Hyde Park, New York. Grading by Master Chefs within the CIA included: hygiene, proper cooking methods, authenticity, taste, plating, use of all ingredients and waste.
